TASTE OF ITALY
TUNA SANDWICH
Makes: 4 sandwiches
Ingredients
1/4 cup pre chopped red onion
1/4 cup chopped fresh basil
1 tablespoon fresh lemon juice
2 tablespoons drained capers
2 tablespoons extra virgin olive oil
1/4 teaspoon black pepper
1/4 cup green olive chopped into small piece
1.4 cup chopped roasted red bell peppers, drained (4 oz.)
2 cans solid white tuna in water, drained (6 oz.)
8 slices low calorie wheat or sourdough bread, toasted
4 tomato slices
4 lettuce pieces
Preparation
Combine 1/4 cup basil, red onion, lemon juice, capers, olive oil, green
olive, 1/4 teaspoon black pepper, tuna, and bell peppers in a bowl, stir
well. Place one piece of lettuce on bread, scoop a 1/2 cup of tuna mixture
on each sandwich, top with tomatoe and serve.
